What began as a wine bar with an Omakase focus has evolved into a restaurant with 4- and 7-course tasting menus that celebrate the freshness of local ingredients and produce from nearby cooperatives. The pairing curation, carefully designed by Pabón and Moreno, offers natural, orange and light wines, including "Pétillant Naturel" from small producers, with options ranging from fresh and young to complex and traditional wines, always highlighting Mexican labels.
