From 1920, ever since restaurants became a regular in its contents, the Michelin Guide has become an international reference for gastronomic quality and standards.
What started as a directory with useful information for drivers who acquired tires from the same-name brand, over time became a standard that, country by country and year by year, is responsible for awarding the best of local cuisine, recognizing the quality and extraordinary origin of its foods.
May 2024 marked the first time that the Michelin Guide officially landed in Mexico, recognizing 18 establishments with stars and highlighting 97 others as must-visit destinations. Among the latter, Siembra Comedor and Aúna in Mexico City, along with Almoraduz in Puerto Escondido, stand out thanks to their singular takes on Mexican cuisine.

In 2022, at 300 Avenida Isaac Newton, in the heart of Polanco, Mexico City, Siembra Comedor y Tortillería was born from the project to rescue native corn begun by Mejía and Montero, and guided by two fundamental principles. Firstly, to pay tribute to the diversity of seasonal Mexican ingredients, establishing in each of their dishes a solid connection between farmers and those passionate about the authentic flavors of the country’s cuisine. Secondly, to promote responsible and sustainable consumption of local produce that has been grown with low-impact techniques and supplied on fair trade principles.

Almoraduz is a restaurant that engages in a dialogue between the legacies of Oaxacan cuisine and author's cuisine, offering a unique gastronomic experience that harmonizes experimentation with local flavors. Founded in 2013 by chefs Quetzalcóatl Zurita and Shalxaly Macías, Almoraduz emerges with the vision of revaluing Oaxacan products through original recipes that blend techniques and processes from various culinary traditions. Located in the Mexican Pacific, this gastronomic destination attracts travelers from different latitudes.
